CNN Explains the Difference Between Grilling and BBQ

CNN did a nice feature called Grill, Baby, Grill BBQ Competitions.
Included in the story is a section highlighting the difference between “grilling” and “bbq.”
Here’s how they described it…
Grilling is hot and fast, or what most people do when they cook a hamburger or a salmon steak over an open flame.
Barbecuing is low and slow, a process that takes 12 hours or more as meat is exposed to gentle, indirect heat in a smoker. Things get more complex with the addition of dry rub seasonings, wood flavoring and liquid injections to help keep the meat moist, but the end result is heavenly for barbecue fans.
CNN described how competition will (or can have) a grilling and barbeque divisions. As they pointed out, it seems to me that grilling competitions are very limited. (CNN says the Northeast is the hotbed, and admits that nobody crows about winning a grilling competition.)

Thanks for sharing the video. What I meant by folks not crowing as much about winning a grilling contest (as someone who has won more grilling contests than bbq…so far) is that state sanctioned bbq contests come with the additional prestige of invitations to the American Royal Invitational and a shot at the Jack Daniels World Championship, both invites people would do anything to get.
