Alltech Inc.’s Lexington Brewing and Distilling Co. has begun distilling a new bourbon for the Alltech FEI World Equestrian Games in 2010.

Following a recipe of corn, malted barley and wheat, the company wants to produce a bourbon that is unique and representative of Lexington, Alltech said in a news release.

Like the company’s Pearse Lyons Reserve, the bourbon is being distilled in two copper pot stills from Scotland, which allow for better control and faster production, the company said in the release.

Alltech also produces Kentucky Ale, Kentucky Light and Kentucky Bourbon Barrel Ale beers.

The combination brewery and distillery operation is located adjacent to a proposed distillery district, where the Old Tarr and Old Pepper distilleries made bourbon years ago from the limestone water in Lexington’s Town Branch.
